If you’re thinking about opening a vegetarian or vegan restaurant, you’ll be riding a wave that’s much more than a ripple – last year 6% of US consumers reported they followed a vegetarian diet and another 5% said they ate vegan . However, appealing to this pool of consumers is just one part of opening a successful restaurant.

3. Explore Potential Partnerships with Plant-Based Food Entrepreneurs

As you research your vegan or vegetarian restaurant idea, it’s important to ask, “Where do plant-based food consumers already shop locally, and what products are they buying?” A low-cost way to research opportunities, find potential partnerships, and interact with your target customers could be visiting your local natural foods grocer or farmers’ market.

In general, restaurants aim for a 25% or higher profit margin per dish. When you’re writing the business plan for your restaurant, you’ll have to factor in these possibly higher food costs, in addition to your lease, insurance, kitchen equipment, décor, and marketing budget.

5. Search for a Location

No matter what enterprise you’re launching – a vegan bakery , a coffee shop, or a plant-based café – always take time to research the market before choosing the location. Will it be a walk-up venue in an area with lots of foot traffic? Is there ample parking if you’re off-the-beaten-track? How will you draw people to your restaurant?

When you add all of these together, you’re looking at startup costs that could run between $175,500 and $750,000 .

To cover these costs, it’s wise to look into multiple sources of funding, including bank loans, grants, and private investors. Remember that many people are passionate about veganism and plant-based eating, so don’t overlook funding from animal rights and wellness groups and individuals.

7. Obtain Permits and Licenses

Before you open your restaurant, you’ll need to get all your legal ducks in a row. Many times, this means multiple trips or phone calls to your city planning department and local health department. Another option is to reach out to a lawyer who specializes in small businesses. They can help ensure that you are doing everything by the books and answer any of your burning questions.

8. Purchase Necessary Equipment and Decor

Once you’ve secured your space, it’s time to make it your own!

If the space doesn’t already come with kitchen equipment, figure out what you’ll need. Some things you may need to purchase include an oven, walk-in refrigerator, flat top, fryer, and a commercial dishwasher.

Along with setting up your kitchen space, you’ll also need to put time into crafting a dining space that matches the vibe you’re striving for. While you can select whatever decor you’d like, keep in mind that many people interested in plant-based eating are also interested in sustainability. Therefore, you may want to consider furnishing your space with antiques, second-hand items, or sustainable options like hemp tablecloths and recycled wood tabletops.

You can also consider making your space more than just a place that serves meals. Your diners may be open to purchasing other eco-friendly products – shopping bags, cookbooks, and locally-made artisan items. A dedicated retail space means that you may have an opportunity to generate even more revenue, either on a consignment basis or through small investments, while supporting your plant-based friends and the community at large.

Chef Peter will manage the kitchen operations of Bluehorn Restaurant & Steakhouse. He will train and oversee the sous chefs, manage inventory, place food inventory orders, deal with the local food vendors, and ensure the highest customer satisfaction with the food.

Anastasia Gillette, Co-Owner

Anastasia Gillette was born and raised in Oklahoma City and has garnered over ten years in the restaurant industry as well. While in college, Anastasia worked as a hostess at one of the area’s most prestigious restaurant establishments. While there, she was eventually promoted to Front of the House Manager where she oversaw the hostesses, servers, bussers, bartenders, and reservations. Her passion always led to the beverage portion of the restaurant so she obtained her Sommelier certificate in 2019. With her wine education, Anastasia is able to cultivate an interesting and elegant wine selection for the restaurant.

Anastasia will oversee front of the house operations, maintain and ensure customer service, and manage all reservations. She will also be in charge of the bar and wine ordering, training of front of the house staff, and will manage the restaurant’s social media accounts once they are set up.

If you’ve ever enjoyed a meal at a restaurant with locations across the country, you might find it hard to believe these multi-unit brands each started as a single location.

It takes a thoughtful, methodical approach for an independent brand to grow into a nationally known restaurant franchise with 1,000-plus locations. That’s explosive growth, and at that rate, there are bound to be a few mistakes along the way. But if you stay focused and disciplined, it is possible to drive similar success with your restaurant franchise brand. My experience shows this, having gone from one restaurant location to more than two dozen.

No matter how big you intend to get, your success will always be one restaurant at a time. With each one, the process gets smoother as you and your team learn more and work out challenges that arise. Here’s what I’ve learned about growing brands, from well-run singles to successful mega-units.

1. Go Slow To Go Fast

I always tell people to go slow to go fast—careful and steady wins the race, while lightning-fast can wear you out and result in you getting left behind. In my many years of running restaurant brands, the brands that failed were the ones that grew too fast and outgrew their human capital.

You must be steady and deliberate, directing your energies where they count. For example, your instinct may be to turn your focus to the two restaurants that are underperforming rather than the 18 that are doing great. Allocating resources and effort toward enhancing your successful establishments might lead to better overall outcomes than expending too much energy on the two that are underperforming, which can take a lot more effort and resources to fix.

In the restaurant space, there’s a tremendous number of details that you have to stay focused on, and you need to make sure that you know every one of your details. That’s why I think the training and development of your people pipeline should be at or near the top of your priority list.

2. Put The Right People In Place

You can have delicious restaurant recipes and a top-notch restaurant brand, but unless you have great people to run that brand and have a great culture in place, you’re not going to succeed. There’s just no way that’s going to work.

This is important for a restaurant brand of any size, but especially when scaling up. As you grow, you’re pulling your top talent out of each location and moving them into the next. The staff you leave behind must continue to be a high-performing team. The culture has to be in place, and you have to have a great customer focus and reputation so guests want you to build another location elsewhere.

As you spread your talent across different locations, you must maintain a robust people pipeline so you don’t grow into a situation like the goose that laid the golden egg—killing your success by pouring everything into one spot so the others wither away.

3. Get The Real Estate Right

One of the most important strategies is to make sure you don’t make any real estate mistakes. You have to be disciplined in your site selection and how much money you will spend on a location to deliver the desired return on invested capital.

Any territory you’re going to give to a franchisee should be small, and it's important to consider how many restaurants they can build in a certain period of time. Make sure to spend a lot of time with your franchisee laying out a plan of the best sites to open first.

Once, I worked with franchisees who found a cheaper site that would be faster to open; unfortunately, it failed. Then, they were hesitant to work on the second and third sites. Had they started with the first two, which were more expensive but located in better areas, they would likely have had no problem launching restaurants later on.

I believe the key is scaling out where you aspire to be while maintaining the discipline to execute it correctly.

4. Keep Up The Quality

Even with your attention paid to the other factors, quality has to remain your number one concern. You can’t ever sacrifice it. As the brand gets bigger, you must be careful not to diminish what it stands for and is built on. You should strive to only make things better.

Even as you grow, for guests, you want to make sure there’s only one location that matters: The one they’re in right now. Make sure the signatures of your brand are consistent across locations, whether this includes memorabilia, menu, atmosphere or price. You must faithfully serve these things no matter how big you get.

5. Never Stand Still

As your brand grows, you should always try to figure out how to elevate everything to make it a little bit better. Whether it’s the quality of the product, the quality of the building itself or the quality of the people in your pipeline, you’ve got to make sure your return on investment is always in line with what you and your partners are looking for. You can only be sure of that if you keep growing at a manageable pace.

Hopefully, these five tips can help ease the growth of your brand. As can be seen, transitioning from a single restaurant to a nationally recognized franchise is doable, but it demands careful navigation, prioritizing the right people and locations, maintaining quality and a continual pursuit of improvement.

Honestly, it's good pizza for being next to an ice rink. Ignore the hater down below who was complaining about his pizza. The fact that someone would leave a small family owned business a review like that is pathetic.

Not a place to go for pizza slices I was in the mood for a slice of pizza, not a whole one. I stopped at Rai's at the Ashburn Ice House figuring their business must be based on selling slices to the kids and families there. The pizzas available already looked pretty bad, but when you ask for a slice, and they run it through their conveyor belt oven it comes out burnt and really nasty. When I asked the guy at the counter if that's the normal, he said yes, that's what happens when they heat the pizza. I threw my slice away it tasted so bad. If you want pizza, go elsewhere. The food and the attitude of the the employee will never have me going there again.

Rai's opened in Ashburn recently in the Ashburn Ice House. The pizza is the best I've had since Sal's (in Ashburn) closed 5+ years ago, and it's now my go-to place for pizza, subs, and wings. The wings here are *huuuuuge*. Not your typical tiny wing you'll get at most wing and/or pizza places. These suckers are gigantic. The staff in the Ashburn location is friendly and wants to get the order right. In my case, I like sauces for wings on the side. Sure, some people may be like, "dude, seriously??", but there are times when I want just the wing. Every time I've ordered plain wings, they call to make sure. Another time I placed two identical orders. Basically, I placed one, went, "oops, should've put quantity 2" and ordered the same thing again. Within a few minutes, they called to confirm. Sure, that sounds like some minor-level stuff, but it was nice to know they weren't just blindly filling orders which I've had happen at other restaurants in the past. Service is prompt with my most recent order being ready for pickup within 15 minutes of placing the order. Yesterday, we had Rai's cater a 60+ person family event. They worked with us to customize our menu to include sliders, wings, mac & cheese, a variety of vegetarian options, chicken skewers, these awesome fried risotto balls, and several other options. They arrived on time (slightly early, which is even better), had everything set up quickly, and the food was fantastic! They will supply the racks and heating cans, or you can purchase them. We went with the second option because it was easier to not have to return them. Plus, they are very durable racks, and we have plenty of fuel left over, so they'll be used again in the future. 100% that I'm going to order from them again in the future for catering and just when I feel like having a sub or slice of pizza. Think of them if you plan on having an event, you won't be disappointed.

Good food with awesome customer service. Pizza is great straight out of the oven. We ordered nachos to go and they packed each item separately so the chips don't get soggy. We have also had their cheesesteak which is filled with lots of meat! Overall great solid place! Note though that if you are in a hurry, they make the food fresh, so it can take 15-20 min to get your food. Order ahead if you are in a rush.
