Why You Should Grow Your Own Food: 8 Research-Backed Reasons

Ever wondered whether it’s worth the time and effort (not to mention money) to grow your own food when it’s so easy and convenient to just buy what you need at the grocery store? I did—but after more than 14 years of growing my own food under a variety of challenging conditions, I can confidently say it’s always worth it.

Why you should grow your own food: 8 research-backed reasons

Ever wondered whether it’s worth the time and effort (not to mention money) to grow your own food when it’s so easy and convenient to just buy what you need at the grocery store? Especially if you live in a challenging climate, don’t have a lot of space, or work a full-time job on top of family obligations?

I did—and I’ve dealt with all those scenarios. But after more than 12 years of growing my own food (in two vastly different climate zones, from a small second-story deck to now an acre homestead, and with two kids underfoot while running a business from home), I can confidently say it’s always worth it.

Here are eight reasons—all backed by research—you should seriously consider growing an edible garden this year.

1. Growing food can save you money.

With the current state of affairs in the world, the cost of groceries has jumped more than 7 percent since January 2021. More specifically, the fruit and vegetable index rose 0.9 percent over January 2022 and price surges are still happening due to inflation.

So it stands to reason that growing your own food can save some money on groceries, but let’s be real: Some people go all out on their gardens and the amount of money they’re actually saving is debatable.

Like any financial investment, your potential return (and long-term success) largely depends on what you choose to grow. Not all crops have the same monetary value, but knowing what to grow can offer significant savings over supermarket purchases.

What kind of crops are worth your time? It helps to start with how much they cost at the market. Prices tend to fluctuate based on the season, geographic location, and environmental factors like drought or disease, but generally, these items are the most expensive to buy organic:

  • Bell peppers
  • Leaf lettuce (and other leafy greens like kale and chard)
  • Summer squash (including zucchini)
  • Beans (you can get more bang for the buck by growing pole beans up a trellis, thereby maximizing your garden space)

One of the reasons I don’t include root vegetables like carrots, turnips, or radishes on my list of high-value crops to grow is because they’re what I call “one and done” crops. That is, you plant them once, harvest them once, the end.

It takes a little more effort to keep these crops going through succession planting, and unless you’re looking for specialty varieties (like black radishes ), it’s generally more cost-effective to buy them in the store.

On the other hand, a single tomato plant can yield upwards of 35 pounds of tomatoes. Bell peppers (the organic ones go for $2.50 each in my local grocer) continue to grow all season long until the first freeze, giving you several harvests from a healthy plant.

When you implement an organic, closed-loop garden that uses natural systems to sustain itself (a method that I teach in Lazy Gardening Academy ), you’ll have more productive crops that require fewer outside resources to thrive. And that means more savings in your pocket.

2. Growing your own food results in less waste.

This is a topic I covered extensively in my book, The No-Waste Vegetable Cookbook , and it’s a topic I’m passionate about. In the United States, we waste a considerable amount of produce not only in our homes, but in our supply chains (waste that totals roughly half of the US produce supply ).

There are many edible and delicious parts of vegetables that never make it to market because:

  • Industrial farming is hard on the plants due to fertilizers, pesticides, and mechanical harvesting—you know this if you’ve ever bought carrots or radishes with limp, dingy greens.
  • They won’t survive transit, at least not without looking a little ragged (which ultimately leads to waste since consumers are wary of imperfect produce).
  • People just don’t know what to do with them because they’re not widely used in this country (but are, in fact, staples in other countries).

That doesn’t mean things like pea shoots, broccoli leaves , squash leaves, and sweet potato leaves are any less nutritious or palatable than their more commonly known “vegetable parts” (in fact, they sometimes pack even more nutrients than the pods, flower buds, fruits, and tubers).

It simply means we, as a culture, need to open ourselves to “new” foods and strive to make vegetables a larger portion of our meals.

When you grow your own food, you not only minimize waste, you double the amount of food in your garden (without having to plant more plants) because you can harvest and use the entire vegetable from top to tail. (And that goes back to the first reason: growing food can save you money, sometimes in unexpected ways).

3. Food you grow is guaranteed to be fresh.

About 30 percent of fresh vegetables and 55 percent of fresh fruits sold in the United States come from overseas , and those numbers continue to grow. That means they traveled many hundreds or thousands of miles to reach your grocery store, in trucks, trains, and ships.

How fresh do you think all that produce really is by the time it lands on your table?

Yeah, probably not so fresh—especially when a lot of vegetables (for example, tomatoes) are harvested when they’re still green and forced to ripen in produce distributors’ warehouses by artificial exposure to ethylene gas.

This is why your red, supposedly-ripe supermarket tomatoes are still rock hard when you buy them and taste kind of like styrofoam. (Honestly, you’re probably better off buying canned tomatoes if you intend to cook them.)

No one can argue that your own yard is as fresh and local as it gets. And since your food is just steps away, you can pick your vegetables at peak ripeness (and peak nutrition) in the proper season, with flavors and textures that surpass those of commercially grown produce.

4. Homegrown produce doesn’t get recalled.

So, all the vegetables and fruits I just mentioned that are shipped from overseas? Turns out, less than 1 percent of imported foods are physically inspected by the FDA.

When you grow your own food, you control your growing environment. And that means you don’t need to worry about E. coli, salmonella, or listeria outbreaks, as long as you keep a tidy garden and have a clean water source.

5. Commercially grown produce often lacks nutrients.

Despite (or because of) scientific advances and modern farming practices, the vegetables of today have fewer vitamins, minerals, and phytonutrients than the vegetables our grandparents and great-grandparents ate. Research has shown up to a 40 percent decline in nutritional content in fruits and vegetables since the 1940s.

Agricultural researchers attribute this decline to two causes :

Environmental dilution effect. The yield increases resulting from fertilization, irrigation, and other environmental means used in industrial farming tend to decrease the concentrations of minerals in those plants. So while farmers can get greater yields from their crops (at more affordable costs), it comes at the expense of lower-quality food.

Genetic dilution effect. This is the result of scientists breeding high-yielding crops without a focus on broad nutrient content, and it’s why heirloom tomatoes are far more flavorful and nutritious than conventional tomatoes .

Much of the food grown commercially comes from hybrid plants that were bred for “desirable” characteristics such as pest and disease resistance, uniformity in appearance, and high yields in a short span of time. While all of this makes it easier for industrial farmers to reliably produce vast amounts of perfect-looking food, nutritional value sometimes suffers.

6. You know exactly what goes in (and on) your food.

There’s another reason conventional supermarket produce looks so perfect: pesticides.

Not all pesticides are equal, as some are relatively benign while others are more concerning (especially to children and other vulnerable people). But, it’s always wise to reduce or moderate your consumption of fruits and vegetables that are known to be vigorously treated with pesticides.

The numbers are fairly shocking if you’ve never thought about it. For example:

  • Strawberries may contain as many as 45 pesticide residues .
  • Celery may contain as many as 64 pesticide residues .
  • Cucumbers may contain as many as 86 pesticide residues .
  • Sweet (bell) peppers may contain as many as 53 pesticide residues .
  • Spinach may contain as many as 54 pesticide residues .

EWG has a handy guide for what it calls the “Dirty Dozen” (that is, plants you should probably grow yourself to avoid contaminants) and the “Clean 15” (plants that are least likely to contain pesticide residue).

In my garden, even natural or organic pesticides (like neem oil or insecticidal soap ) are a last resort.

Rather, I rely on biological controls, crop rotation, interplanting, and soil building to manage pests effectively, and these are methods I teach inside Lazy Gardening Academy . (It might sound complicated, but I named my course Lazy Gardening for a reason!)

7. Growing your own food makes you happier.

There’s certainly a feeling of accomplishment when you harvest something you grew with your own hands, but that natural high isn’t merely pride: It’s also the result of mood-altering soil bacteria entering your bloodstream.

No need to panic though. The feel-good bacterium, Mycobacterium vaccae , is harmless and present in all living soils.

By working in your garden or running your hands through soil, you inadvertently inhale M. vaccae (or get it through a cut), which (according to a 2019 study ) has anti-inflammatory, immunoregulatory, and stress resilience properties.

In other words, M. vaccae bacteria works like nature’s Prozac, giving you a serotonin boost and improving your mood and performance every time you come in contact with the earth.

8. Gardening is simply good for your health.

So you know the mental benefits of gardening, but how about the physical benefits?

Just the simple act of getting outside and doing some light physical activity like mulching , mowing, or raking can reduce cardiovascular mortality by 19 percent. (And according to this study , all it takes is 15 minutes a day of moderate exercise. I don’t know about you, but I get that just from moving bags of compost around the yard!)

Science has proven many times over that gardening has positive effects on your overall health and body by contributing to longevity , reducing heart disease and stroke , reducing risk of death from respiratory illnesses (thanks to improved air quality), warding off dementia , reducing obesity , improving your sleep , and boosting vitamin D levels (which in turn help prevent chronic diseases ).

All that—without ever stepping foot in a gym, and with all the joy of feeding yourself and your family fresh, nutrient-dense food while doing good for the earth, too.

Introduction

In this argumentative research essay for a first-year composition class, student Lily Tran creates a solid, focused argument and supports it with researched evidence. Throughout the essay, she uses this evidence to support cause-and-effect and problem-solution reasoning, make strong appeals, and develop her ethos on the topic.

Living by Their Own Words

Food as change.

From 1 billion in 1804, it doubled to approximately 2 billion by 1927, then doubled again to approximately 4 billion in 1974. By 2019, it had nearly doubled again, rising to 7.7 billion (“World Population by Year”). It has been projected to reach nearly 10 billion by 2050 (Berners-Lee et al.). At the same time, the average life span also has been increasing. These situations have led to severe stress on the environment, particularly in the demands for food. It has been estimated, for example, that by 2050, milk production will increase 58 percent and meat production 73 percent (Chai et al.). end public domain text

At the same time, about a third of all grains and almost two-thirds of all soybeans, maize, and barley crops are fed to animals (Barnard). According to the World Health Organization, 462 million adults are underweight, 47 million children under 5 years of age are underweight for their height, 14.3 million are severely underweight for their height, and 144 million are stunted (“Malnutrition”). About 45 percent of mortality among children under 5 is linked to undernutrition. These deaths occur mainly in low- and middle-income countries where, in stark contrast, the rate of childhood obesity is rising. Globally, 1.9 billion adults and 38.3 million children are overweight or obese (“Obesity”). Undernutrition and obesity can be found in the same household, largely a result of eating energy-dense foods that are high in fat and sugars. The global impact of malnutrition, which includes both undernutrition and obesity, has lasting developmental, economic, social, and medical consequences. end public domain text

public domain text In 2019, Berners-Lee et al. published the results of their quantitative analysis of global and regional food supply. They determined that significant changes are needed on four fronts: end public domain text

Food production must be sufficient, in quantity and quality, to feed the global population without unacceptable environmental impacts. Food distribution must be sufficiently efficient so that a diverse range of foods containing adequate nutrition is available to all, again without unacceptable environmental impacts. Socio-economic conditions must be sufficiently equitable so that all consumers can access the quantity and range of foods needed for a healthy diet. Consumers need to be able to make informed and rational choices so that they consume a healthy and environmentally sustainable diet (10).

public domain text Among their findings, they singled out, in particular, the practice of using human-edible crops to produce meat, dairy, and fish for the human table. Currently 34 percent of human-edible crops are fed to animals, a practice that reduces calorie and protein supplies. They state in their report, “If society continues on a ‘business-as-usual’ dietary trajectory, a 119% increase in edible crops grown will be required by 2050” (1). Future food production and distribution must be transformed into systems that are nutritionally adequate, environmentally sound, and economically affordable. end public domain text

Land and Water Use

public domain text Agriculture occupies 40 percent of Earth’s ice-free land mass (Barnard). While the net area used for producing food has been fairly constant since the mid-20th century, the locations have shifted significantly. Temperate regions of North America, Europe, and Russia have lost agricultural land to other uses, while in the tropics, agricultural land has expanded, mainly as a result of clearing forests and burning biomass (Willett et al.). Seventy percent of the rainforest that has been cut down is being used to graze livestock (Münter). Agricultural use of water is of critical concern both quantitatively and qualitatively. Agriculture accounts for about 70 percent of freshwater use, making it “the world’s largest water-consuming sector” (Barnard). Meat, dairy, and egg production causes water pollution, as liquid wastes flow into rivers and to the ocean (World Wildlife Fund and Knorr Foods). According to the Hertwich et al., “the impacts related to these activities are unlikely to be reduced, but rather enhanced, in a business-as-usual scenario for the future” (13). end public domain text

public domain text Earth’s resources and ability to absorb pollution are limited, and many current agricultural practices undermine these capacities. Among these unsustainable practices are monocropping [growing a single crop year after year on the same land], concentrated animal-feeding operations, and overdependence on manufactured pesticides and fertilizers (Hamilton). Such practices deplete the soil, dramatically increase energy use, reduce pollinator populations, and lead to the collapse of resource supplies. One study found that producing one gram of beef for human consumption requires 42 times more land, 2 times more water, and 4 times more nitrogen than staple crops. It also creates 3 times more greenhouse gas emissions (Chai et al.). The EAT– Lancet Commission calls for “halting expansion of new agricultural land at the expense of natural ecosystems . . . strict protections on intact ecosystems, suspending concessions for logging in protected areas, or conversion of remaining intact ecosystems, particularly peatlands and forest areas” (Willett et al. 481). The Commission also calls for land-use zoning, regulations prohibiting land clearing, and incentives for protecting natural areas, including forests. end public domain text

Greenhouse Gas and Climate Change

public domain text Climate change is heavily affected by two factors: greenhouse gas emissions and carbon sequestration. In nature, the two remain in balance; for example, most animals exhale carbon dioxide, and most plants capture carbon dioxide. Carbon is also captured, or sequestered, by soil and water, especially oceans, in what are called “sinks.” Human activities have skewed this balance over the past two centuries. The shift in land use, which exploits land, water, and fossil energy, has caused increased greenhouse-gas emissions, which in turn accelerate climate change. end public domain text

public domain text Global food systems are threatened by climate change because farmers depend on relatively stable climate systems to plan for production and harvest. Yet food production is responsible for up to 30 percent of greenhouse gas emissions (Barnard). While soil can be a highly effective means of carbon sequestration, agricultural soils have lost much of their effectiveness from overgrazing, erosion, overuse of chemical fertilizer, and excess tilling. Hamilton reports that the world’s cultivated and grazed soils have lost 50 to 70 percent of their ability to accumulate and store carbon. As a result, “billions of tons of carbon have been released into the atmosphere.” end public domain text

public domain text While carbon sequestration has been falling, greenhouse gas emissions have been increasing as a result of the production, transport, processing, storage, waste disposal, and other life stages of food production. Agriculture alone is responsible for fully 10 to 12 percent of global emissions, and that figure is estimated to rise by up to 150 percent of current levels by 2030 (Chai et al.). Münter reports that “more greenhouse gas emissions are produced by growing livestock for meat than all the planes, trains, ships, cars, trucks, and all forms of fossil fuel-based transportation combined” (5). Additional greenhouse gases, methane and nitrous oxide, are produced by the decomposition of organic wastes. Methane has 25 times and nitrous oxide has nearly 300 times the global warming potential of carbon dioxide (Curnow). Agricultural and food production systems must be reformed to shift agriculture from greenhouse gas source to sink. end public domain text

Social and Cultural Values

public domain text As the Sierra Club has pointed out, agriculture is inherently cultural: all systems of food production have “the capacity to generate . . . economic benefits and ecological capital” as well as “a sense of meaning and connection to natural resources.” Yet this connection is more evident in some cultures and less so in others. Wealthy countries built on a consumer culture emphasize excess consumption. One result of this attitude is that in 2014, Americans discarded the equivalent of $165 billion worth of food. Much of this waste ended up rotting in landfills, comprised the single largest component of U.S. municipal solid waste, and contributed a substantial portion of U.S. methane emissions (Sierra Club). In low- and middle-income countries, food waste tends to occur in early production stages because of poor scheduling of harvests, improper handling of produce, or lack of market access (Willett et al.). At the beginning of the 20th century, more than half of Americans lived in rural areas. How we lived and what we ate were deeply intertwined. But today, fewer than 2% of people live on farms or ranches.

Despite this trend toward Big Agriculture, Victory Gardeners in the 1940s and plant lovers in the ‘60s and ‘70s chose to grow their own food. Today, Millennials and a growing number of Gen Zers recognize that kitchen gardening helps curtail their carbon emissions, connects them with their bioregion , and saves them hard-earned cash.

We designed this guide to help you grow your own food, no matter where you live.

The Popularity of Home Food Gardening

By 2014, around one in three American households grew their own food—the highest participation in a decade. Public figures, including Michelle Obama , popularized edible gardening and brought the connection between food, health, and climate into the national conversation.

By 2020, the country was primed for an explosion of what’s commonly known as kitchen gardening . Supply chain issues, the challenges of shopping for food in a grocery store, and the need to find safe, outdoor activities drove many younger Americans to grow their own food. 

A survey conducted by retailer Bonnie Plants found that nearly two in five people under the age of 35 reported growing their own veggies and herbs—many of whom were gardening for the first time. Suddenly, the younger generation had supplanted Baby Boomers as the largest demographic of home food gardeners.

Challenges of Home Food Gardening

These new gardeners face unique challenges compared to older generations. Because the majority of Millennials live in urban areas and rent instead of own their homes, it can be difficult for them to find space or proper sun exposure to grow edible garden plants. These gardeners must cultivate food in their kitchens or, if they’re lucky, in community gardens. 

The generation gap also exposes itself as a wealth gap, not just in property ownership but also in wealth accumulation. Millennials make significantly less money than any generation before them, but they bear the cost of inflation, including food.  

Corn, soy, wheat, and rice subsidies make processed foods far less expensive than fresh fruits and vegetables. For people on a budget, affording the luxury of buying plants or seeds and waiting for them to produce edible food may not be feasible. 

The same holds for composting , which has size limits if confined to an indoor space. Without state or local ordinances that require municipal waste management to include composting, a genuinely circular food system remains a dream.

Still, with a bit of research and some creativity, almost anyone can create an affordable edible garden, no matter how small.

The Benefits of Growing Your Own Food

Growing your own food provides benefits to both personal and planetary well-being. It can help you create a circular waste stream, educate you on your local climate, and even save you money.

Reduces Food Waste

As much as 40% of food in the United States is wasted—a devastating and unsustainable reality given that we must feed our ever-growing population. Food grown at home is less likely to go to waste because it can easily be picked fresh and consumed immediately. Plus, it tastes great! 

Reduces Transportation Emissions

Kitchen gardening requires fewer transportation emissions from farm-to-store and store-to-table. A 2008 study found that about 15% of food-related emissions occur after food leaves the farm (not accounting for consumer transportation to home). Reduce your mileage—or the mileage driven by a grocery delivery service—and save time by growing foods you consume regularly. 

Reduces Plastic Waste

Fruits, vegetables, and herbs are notorious for being packaged in plastic. Clamshell boxes, pre-portioned mesh bags, and plastic produce bags (for customers who forget their reusable ones ) are nonrecyclable. Many veggies and herbs can be grown in nearly any home, keeping that plastic out of landfills and eventually our drinking water.

Turns Food Scraps into New Food

There’s a type of composting for you no matter where you live. After using your homegrown veggies and herbs in a broth, repurpose the scraps into food for your food. Welcome to your circular kitchen.

Provides Homes for Pollinators

The only thing that makes an edible garden better is an edible garden that attracts pollinators like bees, butterflies, birds, and even bats. 

Helps Sequester Carbon in Soil

Let your kitchen garden double as a carbon garden. By taking pollinators into account, edible gardens can mimic natural relationships between plants and animals, creating carbon sinks that remove greenhouse gasses from the atmosphere. 

Improves Health

A study out of Texas A&M found that gardening can reduce stress and anxiety. Growing your own food also encourages you to eat more fruits and vegetables, reduces your pesticide intake, and engages you in a relationship with your food.

Saves You Money

There are many foods you can grow for next to no investment. You can grow celery from scraps and green onions in a jar of water. Culinary herbs like mint and basil can grow in containers by a kitchen window and are often comparably priced to their precut counterparts.

Getting your kitchen garden started is easy. Once you know where you’ll be growing, you can plan out your fruits and veggies and celebrate your climate victory .

Select Your Garden Location

You don’t need a plot of land to grow your own food. You can grow inside or outside, so long as you have access to sunlight and water. Even a well-lit window can grow herbs and other vegetables in small containers.

Understand Your Hardiness Zone

Edible gardens understandably look different in South Dakota than they do in Florida. USDA’s Plant Hardiness Zone Map guides gardeners to the plants most likely to thrive in their zip code.

By understanding how your microclimate will help or hinder your gardening efforts, you can build a resilient and diverse garden that can provide food for years. Go another step further by including the concept of bioregionalism in designing your kitchen garden. 

What Is a Bioregion?

A bioregion is a geographic area defined by its biological and topographical features while considering how the humans who live there interact with the natural world. This concept contrasts with boundaries defined by political, economic, or cultural distinctions.

Map Your Sunlight

Whether you’re planting in your backyard, on your balcony, or in your bedroom, what you need is good sun exposure. Many edible plants, especially fruit trees, require six hours of full sun that can be split up during the day. 

Scout the perfect garden location by creating a sun map . Pay attention to how sunlight affects your whole gardening area as some parts may have sun and shade at different times of the day. Sunlight also changes throughout the year, so it’s often valuable to map your sun once per season to get an accurate annual picture.

If you’ve got more shade than sun, don’t despair. Lettuce and other greens love the shade.

Select Your Plants

After all that research, you’re ready to choose which plants will work best for your edible garden. If you’ve got a yard, you have your choice of beans, squashes , root vegetables, fruit trees, berries, herbs , and cruciferous vegetables. Container gardeners often favor herbs, tomatoes , peppers, onions, greens, and dwarf fruit trees.

Consider planting a mix of foods instead of a singular crop. Polyculture gardens have higher yields than monocultures. You may also want to plan for a bit of crop rotation through the growing seasons.

If you’d like expert guidance on what to select, buy your starter plants at a specialty nursery where the employees are knowledgeable about home food gardening.

Consider your container size when choosing your plants. A limited space garden can support peppers, herbs, kale, and greens grown in small containers. Beans, tomatoes, and cucumbers, on the other hand, need containers at least two feet in diameter. 

Choose Good Soil

If your yard garden has deep, well-drained, quality soil, you can plant food in it. Otherwise, you may opt for purchased soil in raised beds (just as container gardeners do). You’ll see a difference when using high-end organic soil wherever you grow.

Quality soil comes at a price, but it’s a worthwhile investment for beginning gardeners. Keep in mind that while topsoil for ground gardening stays stable year after year, potting soil decomposes. You’ll need to add soil to your containers after the first year.

Use the Right Tools

Nothing’s more frustrating than trying to accomplish a task with the wrong widget. Garden tools such as pruners, watering cans, and trowels make the elbow-grease of gardening that much smoother and more enjoyable. Don’t forget your gloves (and always wash your hands after handling soil).

Water Deeply and Infrequently

Instead of feeding your plants a little water all the time, deep and infrequent watering encourages root growth. However, if you live in a particularly hot climate or your plants are in terracotta containers (which dry out more quickly than glazed containers), you may still have to water up to twice daily if the top two inches of soil are dry. 

Ensure your containers have good drainage to prevent the roots from becoming waterlogged. Avoid wasting water by practicing mindfulness—stop when water starts to fill the bottom saucer instead of blindly drenching your plants. 

Building berms, or raised mounds of soil, can help keep water around the plant for yard gardeners. Container gardeners can keep the plant slightly higher than the soil height for best drainage.

Feed Your Plants Nutrients

All food gardens need additional nutrients and should receive light fertilization once a week. Food gardens in containers lose more nutrients in watering than fruits and veggies plants in the ground, and they require additional organic fertilizer .

Both container and yard gardens do well when properly mulched because mulch helps keep nutrients and moisture in the soil. Good mulching practice is becoming more and more important as more parts of the country experience droughts caused by climate disruption . 

Enjoy Your Harvest

Nothing tastes better than the food you grew yourself, and after all your hard work gardening, you deserve a celebration. Invite some friends over for dinner. Maybe you'll inspire another gardener to take up the trowel.

Growing an edible garden connects you to what you eat, saves you time and money, reduces your carbon footprint, relieves stress, and provides healthy, nutritious food.

Growing your own food reduces pesticide use, plastic pollution, and food waste—all contributors to unsustainability. In addition to cutting down on carbon emissions from transportation, home food gardens also trap carbon dioxide in their soil.

Yes, for so many reasons. The initial financial investment provides an excellent food yield over an extended period. On a day-to-day basis, the mental and physical health benefits are worth the time spent.

Growing your own vegetables can be an easy and enjoyable way to positively impact the environment. Not only do you get to enjoy the literal fruits of your labor, but your hobby can reduce your food bill, provide a home for pollinators, and reduce greenhouse gas levels.

Growing your own food can be a cheaper alternative to hunting through grocery store produce . Homegrown food is rich in nutrients, and you will have the peace of mind of knowing exactly how it was grown.

Spending time in your garden outside can even have other health benefits, says Healthline . Spending time in the sun will help your body absorb vitamin D, which can strengthen your bones and immune system, as well as prevent certain cancers. Gardening can even help boost your mood — spending time working in the garden can lower anxiety and reduce stress. You might even feel empowered once you can enjoy your food, knowing that you were able to grow delicious fruits and vegetables from seeds .

Although it may be easier to drive to the grocery store and pick out some produce, rising food costs may be a source of stress. Growing your own food can be a great way to save some money while still enjoying fresh food.

Healthier food at a lower cost

The boom in gardening started during the pandemic, reports Fox Business . Now, people are using their newfound skills to combat inflation as food costs continue to rise . The food index has been steadily rising for nearly a year and a half, according to the U.S. Bureau of Labor Statistics . Rather than paying higher prices for produce, people are finding it cheaper to purchase seeds and grow their own food.

When growing your own food, think about what you typically eat. If you consider yourself a green bean aficionado , do yourself a favor and start a supply at home. Good Morning America says zucchini , tomatoes, and cucumbers generally have a high growth success rate. They also say a package of lettuce seeds could only cost a few dollars, and provide a whole summer's worth of produce .

Food crops that continue to produce a harvest for many weeks or even months are generally considered more cost effective to grow yourself. Want to grow your own food? 9 tips to help you get started

Whether it’s as a hobby while people are stuck at home or a way to get fresh produce without going to stores, vegetable and fruit gardening is having a bit of a renaissance right now.

But if you’ve been killing houseplants for years or aren’t sure where to start, it’s not all that complicated, says  Stephen Ritz , New York City educator and founder of the  Green Bronx Machine . He’s been growing food with kids in classrooms for years in the South Bronx, an area considered to be a  food desert , where access to supermarkets — and fresh, healthy food — is limited.

Here are his tips for growing your own food:

1. Choose plants that match your experience level

There are a lot of plants that are easy for first-time growers. “I call them the unders and the overs,” explains Ritz. “There are some things that grow over the ground, like lettuces, spinach and scallions, and you can’t go wrong with them. And then there are things that grow under the ground, like radishes, carrots, green onions, that are real easy. Parsley, oregano, other herbs — these are more things you can’t go wrong with. Tomatoes are also really easy plants to grow.” ( Editor’s note: If you are trying to grow any plants indoors, you must have a spot that gets a lot of direct sun — at least 4 – 6 hours a day for vegetables and 8 – 10 hours a day for fruit.  )

Besides ease, it’s also good to choose plants you can continue to enjoy, instead of ones you just harvest once, says Ritz. “Things that you can clip and continually eat like collard greens and mustard greens. Mint is so cool to grow at home. I think the best mint to grow is chocolate mint, because the leaves are broad and really fragrant. But spearmint, peppermint, lemon balm are great, too — herbs like these have a smell good, look good and flower.”

2. Use what you have at home

You don’t need to buy fancy planters or special window boxes. There are probably dozens of things already in your home that your plants will live quite happily in, says Ritz. “Coffee cans, yogurt containers, you name it. Old fish tanks … anything ceramic. You can use virtually anything, and that’s the beauty of gardening. Some of my favorite containers to grow in are two-liter soda bottles. You cut them in half. With yogurt containers, you can hang them vertically on a terrace, fire escape or outdoor space with fishing line or good twine. Be creative, have fun, make it decorative.”

“A lot of things are fun to grow if you have enough space for their roots to spread,” he explains. “You can actually grow potatoes in a reusable IKEA bag or reusable grocery bag. If you cut a hole in it, then you can pull the potatoes right out of the bottom [when it’s time to harvest]. It’s really cool. Same thing with carrots and radishes.”

3. Plant placement is key

Make sure you give your plants the best start in life. If you’re beginning from seed, ample sun will influence how strong and healthy your plant will become, says Ritz. A south-facing exposure is usually the best spot. “When the seedlings get long and leggy, it’s because they’re chasing light. That’s not good.”

His other advice for indoor gardeners: “Avoid drafts and excessive heat. Don’t put them on the radiator; those plants will heat up and you’ll just disintegrate the seed. A windowsill is great. Lots of sun, warmth, little bit of moisture, and a covering [that lets light through], a lot of love, good conversation — you’re all good.”

4. Use food scraps to grow new plants and avoid food waste

Regrowing  your leftover scraps  — like celery, scallions, leeks and more — is another doable project, says Ritz. “It’s a great way to avoid food waste and continue to perpetuate the food cycle. Ultimately, things do need soil once the roots start coming off, because you don’t want to drown them. You could take the remains of a head of celery, stick it in a plate of water. Leave it for a week or two, you’ll have roots, and then plant it in soil.”

5. Your home is its own unique microclimate

The best way to learn what grows well there is by trying it out yourself. “The most important thing to remember is there’s only one place that has the perfect plant: A picture. I’ve killed a lot more things than I’ve grown, but I only take pictures of the living ones,” laughs Ritz.

6. Don’t overpack or overwater

There are a few common pitfalls to steer clear of, according to Ritz. “Don’t overpack soil in your containers. People think they should jam it down, but basically you end up creating cement. Plants’ roots like to spread, so keep the soil loose. The biggest mistake, really, is overwatering plants. One of the easiest things you could do is put a little gravel or a little charcoal at the bottom [of the pot] or sometimes even a bottle cap, so there’s space for drainage. If you do overwater, the water will sit in the bottom.”

7. Choose the right plants for the space you have

If you’re growing larger plants, pick varieties that won’t engulf your space. For example, you might think that cherry tomatoes will be a manageable size, but that’s actually not the case, says Ritz. “You want to grow San Marzano or Roma tomatoes, or dwarf tomatoes. If you’re limited in space, you definitely want to stay away from cherry tomatoes. You’ll get a huge crop, but manicuring those plants — it can be like a jungle. They can be six feet tall sometimes!”

“One plant that I recommend as a not-to-grow — but could be a wonderful thing to grow for beginners — is zucchini. The problem is they’re very invasive; they can take over the garden. On the one hand, it’s wonderful that you can’t go wrong; on the other hand, it’s a bit of a bully. But if you want success and you want to see something big, go with a zucchini.”

If you’re not sure whether anything can grow in your low-light apartment, try these robust plants. “Oregano and mint do really well in shady areas,” says Ritz. “Lettuces do well in normal house light. The better the light, the quicker you’ll grow. You can also get a cheap full-spectrum grow light for anywhere from $10 to $20, including the fixture.”

8. Grow what you know you like to eat

While it’s tempting to grow things that are easy, Ritz says, it’s important that your time, effort and energy go into creating food you like so it doesn’t contribute to food waste. If COVID-19 restrictions mean you can’t easily give away food or you’ve had a bumper crop, try preserving methods like canning, pickling or drying so you can consume them later.

9. Most importantly — enjoy yourself!

Ritz has seen urban farming change the lives of his students. There’s no reason you can’t experience that in your own home, no matter where you are. “What I really want people to do is have fun,” he says. “I think growing food is a whole new maker space. The food system and hacking growing should be fun. I still marvel that you take this little teeny tiny seed, and 60 days later, you can have a big bounty to eat.”

For people who are at home with their families now, growing can be a wonderful way to connect. Grow with your kids, or get your parents involved. Ritz says, “I believe food is the language through which society reveals itself, and how we grow it and share it is critical for this and future generations.”

A good introduction paragraph is an essential part of any academic essay . It sets up your argument and tells the reader what to expect.

The main goals of an introduction are to:

  • Catch your reader’s attention.
  • Give background on your topic.
  • Present your thesis statement —the central point of your essay.

This introduction example is taken from our interactive essay example on the history of Braille.

The invention of Braille was a major turning point in the history of disability. The writing system of raised dots used by visually impaired people was developed by Louis Braille in nineteenth-century France. In a society that did not value disabled people in general, blindness was particularly stigmatized, and lack of access to reading and writing was a significant barrier to social participation. The idea of tactile reading was not entirely new, but existing methods based on sighted systems were difficult to learn and use. As the first writing system designed for blind people’s needs, Braille was a groundbreaking new accessibility tool. It not only provided practical benefits, but also helped change the cultural status of blindness. This essay begins by discussing the situation of blind people in nineteenth-century Europe. It then describes the invention of Braille and the gradual process of its acceptance within blind education. Subsequently, it explores the wide-ranging effects of this invention on blind people’s social and cultural lives.

Your first sentence sets the tone for the whole essay, so spend some time on writing an effective hook.

Avoid long, dense sentences—start with something clear, concise and catchy that will spark your reader’s curiosity.

The hook should lead the reader into your essay, giving a sense of the topic you’re writing about and why it’s interesting. Avoid overly broad claims or plain statements of fact.

Examples: Writing a good hook

Take a look at these examples of weak hooks and learn how to improve them.

  • Braille was an extremely important invention.
  • The invention of Braille was a major turning point in the history of disability.

The first sentence is a dry fact; the second sentence is more interesting, making a bold claim about exactly  why the topic is important.

  • The internet is defined as “a global computer network providing a variety of information and communication facilities.”
  • The spread of the internet has had a world-changing effect, not least on the world of education.

Avoid using a dictionary definition as your hook, especially if it’s an obvious term that everyone knows. The improved example here is still broad, but it gives us a much clearer sense of what the essay will be about.

  • Mary Shelley’s  Frankenstein is a famous book from the nineteenth century.
  • Mary Shelley’s Frankenstein is often read as a crude cautionary tale about the dangers of scientific advancement.

Instead of just stating a fact that the reader already knows, the improved hook here tells us about the mainstream interpretation of the book, implying that this essay will offer a different interpretation.

Next, give your reader the context they need to understand your topic and argument. Depending on the subject of your essay, this might include:

  • Historical, geographical, or social context
  • An outline of the debate you’re addressing
  • A summary of relevant theories or research about the topic
  • Definitions of key terms

The information here should be broad but clearly focused and relevant to your argument. Don’t give too much detail—you can mention points that you will return to later, but save your evidence and interpretation for the main body of the essay.

How much space you need for background depends on your topic and the scope of your essay. In our Braille example, we take a few sentences to introduce the topic and sketch the social context that the essay will address:

Now it’s time to narrow your focus and show exactly what you want to say about the topic. This is your thesis statement —a sentence or two that sums up your overall argument.

This is the most important part of your introduction. A  good thesis isn’t just a statement of fact, but a claim that requires evidence and explanation.

The goal is to clearly convey your own position in a debate or your central point about a topic.

Particularly in longer essays, it’s helpful to end the introduction by signposting what will be covered in each part. Keep it concise and give your reader a clear sense of the direction your argument will take.

As you research and write, your argument might change focus or direction as you learn more.

For this reason, it’s often a good idea to wait until later in the writing process before you write the introduction paragraph—it can even be the very last thing you write.

When you’ve finished writing the essay body and conclusion , you should return to the introduction and check that it matches the content of the essay.

It’s especially important to make sure your thesis statement accurately represents what you do in the essay. If your argument has gone in a different direction than planned, tweak your thesis statement to match what you actually say.

This introduction to an argumentative essay sets up the debate about the internet and education, and then clearly states the position the essay will argue for.

The spread of the internet has had a world-changing effect, not least on the world of education. The use of the internet in academic contexts is on the rise, and its role in learning is hotly debated. For many teachers who did not grow up with this technology, its effects seem alarming and potentially harmful. This concern, while understandable, is misguided. The negatives of internet use are outweighed by its critical benefits for students and educators—as a uniquely comprehensive and accessible information source; a means of exposure to and engagement with different perspectives; and a highly flexible learning environment.

This introduction to a short expository essay leads into the topic (the invention of the printing press) and states the main point the essay will explain (the effect of this invention on European society).

In many ways, the invention of the printing press marked the end of the Middle Ages. The medieval period in Europe is often remembered as a time of intellectual and political stagnation. Prior to the Renaissance, the average person had very limited access to books and was unlikely to be literate. The invention of the printing press in the 15th century allowed for much less restricted circulation of information in Europe, paving the way for the Reformation.

This introduction to a literary analysis essay , about Mary Shelley’s Frankenstein , starts by describing a simplistic popular view of the story, and then states how the author will give a more complex analysis of the text’s literary devices.

Mary Shelley’s Frankenstein is often read as a crude cautionary tale. Arguably the first science fiction novel, its plot can be read as a warning about the dangers of scientific advancement unrestrained by ethical considerations. In this reading, and in popular culture representations of the character as a “mad scientist”, Victor Frankenstein represents the callous, arrogant ambition of modern science. However, far from providing a stable image of the character, Shelley uses shifting narrative perspectives to gradually transform our impression of Frankenstein, portraying him in an increasingly negative light as the novel goes on. While he initially appears to be a naive but sympathetic idealist, after the creature’s narrative Frankenstein begins to resemble—even in his own telling—the thoughtlessly cruel figure the creature represents him as.

Your essay introduction should include three main things, in this order:

  • An opening hook to catch the reader’s attention.
  • Relevant background information that the reader needs to know.

The structure of the body is flexible, but you should always spend some time thinking about how you can organize your essay to best serve your ideas.

A Feast for the Future

Close your eyes and imagine the not too distant future: The Statue of Liberty is up to her knees in water, the streets of lower Manhattan resemble the canals of Venice, and hurricanes arrive in the fall and stay until summer. Now, open your eyes and see the beautiful planet that we will destroy if we do not do something. Now is the time for change. Our future is in our control if we take actions, ranging from small steps, such as not using plastic straws, to large ones, such as reducing fossil fuel consumption and electing leaders who take the problem seriously.

 Hosting a dinner party is an extraordinary way to publicize what is at stake. At my potluck, I would serve linguini with clams. The clams would be sautéed in white wine sauce. The pasta tossed with a light coat of butter and topped with freshly shredded parmesan. I choose this meal because it cannot be made if global warming’s patterns persist. Soon enough, the ocean will be too warm to cultivate clams, vineyards will be too sweltering to grow grapes, and wheat fields will dry out, leaving us without pasta.

I think that giving my guests a delicious meal and then breaking the news to them that its ingredients would be unattainable if Earth continues to get hotter is a creative strategy to initiate action. Plus, on the off chance the conversation gets drastically tense, pasta is a relatively difficult food to throw.

In YES! Magazine’s article, “Cooking Stirs the Pot for Social Change,” Korsha Wilson says “…beyond the narrow definition of what cooking is, you can see that cooking is and has always been an act of resistance.” I hope that my dish inspires people to be aware of what’s at stake with increasing greenhouse gas emissions and work toward creating a clean energy future.

 My guest list for the potluck would include two groups of people: local farmers, who are directly and personally affected by rising temperatures, increased carbon dioxide, drought, and flooding, and people who either do not believe in human-caused climate change or don’t think it affects anyone. I would invite the farmers or farm owners because their jobs and crops are dependent on the weather. I hope that after hearing a farmer’s perspective, climate-deniers would be awakened by the truth and more receptive to the effort to reverse these catastrophic trends.

Earth is a beautiful planet that provides everything we’ll ever need, but because of our pattern of living—wasteful consumption, fossil fuel burning, and greenhouse gas emissions— our habitat is rapidly deteriorating. Whether you are a farmer, a long-shower-taking teenager, a worker in a pollution-producing factory, or a climate-denier, the future of humankind is in our hands. The choices we make and the actions we take will forever affect planet Earth.

 India Brown is an eighth grader who lives in New York City with her parents and older brother. She enjoys spending time with her friends, walking her dog, Morty, playing volleyball and lacrosse, and swimming.

Apple Pie Embrace

It’s 1:47 a.m. Thanksgiving smells fill the kitchen. The sweet aroma of sugar-covered apples and buttery dough swirls into my nostrils. Fragrant orange and rosemary permeate the room and every corner smells like a stroll past the open door of a French bakery. My eleven-year-old eyes water, red with drowsiness, and refocus on the oven timer counting down. Behind me, my mom and aunt chat to no end, fueled by the seemingly self-replenishable coffee pot stashed in the corner. Their hands work fast, mashing potatoes, crumbling cornbread, and covering finished dishes in a thin layer of plastic wrap. The most my tired body can do is sit slouched on the backless wooden footstool. I bask in the heat escaping under the oven door.

 As a child, I enjoyed Thanksgiving and the preparations that came with it, but it seemed like more of a bridge between my birthday and Christmas than an actual holiday. Now, it’s a time of year I look forward to, dedicated to family, memories, and, most importantly, food. What I realized as I grew older was that my homemade Thanksgiving apple pie was more than its flaky crust and soft-fruit center. This American food symbolized a rite of passage, my Iraqi family’s ticket to assimilation. 

 Some argue that by adopting American customs like the apple pie, we lose our culture. I would argue that while American culture influences what my family eats and celebrates, it doesn’t define our character. In my family, we eat Iraqi dishes like mesta and tahini, but we also eat Cinnamon Toast Crunch for breakfast. This doesn’t mean we favor one culture over the other; instead, we create a beautiful blend of the two, adapting traditions to make them our own.

 That said, my family has always been more than the “mashed potatoes and turkey” type.

My mom’s family immigrated to the United States in 1976. Upon their arrival, they encountered a deeply divided America. Racism thrived, even after the significant freedoms gained from the Civil Rights Movement a few years before. Here, my family was thrust into a completely unknown world: they didn’t speak the language, they didn’t dress normally, and dinners like riza maraka seemed strange in comparison to the Pop Tarts and Oreos lining grocery store shelves.

 If I were to host a dinner party, it would be like Thanksgiving with my Chaldean family. The guests, my extended family, are a diverse people, distinct ingredients in a sweet potato casserole, coming together to create a delicious dish.

In her article “Cooking Stirs the Pot for Social Change,” Korsha Wilson writes, “each ingredient that we use, every technique, every spice tells a story about our access, our privilege, our heritage, and our culture.” Voices around the room will echo off the walls into the late hours of the night while the hot apple pie steams at the table’s center.

We will play concan on the blanketed floor and I’ll try to understand my Toto, who, after forty years, still speaks broken English. I’ll listen to my elders as they tell stories about growing up in Unionville, Michigan, a predominately white town where they always felt like outsiders, stories of racism that I have the privilege not to experience. While snacking on sunflower seeds and salted pistachios, we’ll talk about the news- how thousands of people across the country are protesting for justice among immigrants. No one protested to give my family a voice.

Our Thanksgiving food is more than just sustenance, it is a physical representation of my family ’s blended and ever-changing culture, even after 40 years in the United States. No matter how the food on our plates changes, it will always symbolize our sense of family—immediate and extended—and our unbreakable bond.

Nourishing Change After Tragedy Strikes

In the Jewish community, food is paramount. We often spend our holidays gathered around a table, sharing a meal and reveling in our people’s story. On other sacred days, we fast, focusing instead on reflection, atonement, and forgiveness.

As a child, I delighted in the comfort of matzo ball soup, the sweetness of hamantaschen, and the beauty of braided challah. But as I grew older and more knowledgeable about my faith, I learned that the origins of these foods are not rooted in joy, but in sacrifice.

The matzo of matzo balls was a necessity as the Jewish people did not have time for their bread to rise as they fled slavery in Egypt. The hamantaschen was an homage to the hat of Haman, the villain of the Purim story who plotted the Jewish people’s destruction. The unbaked portion of braided challah was tithed by commandment to the kohen  or priests. Our food is an expression of our history, commemorating both our struggles and our triumphs.

As I write this, only days have passed since eleven Jews were killed at the Tree of Life Synagogue in Pittsburgh. These people, intending only to pray and celebrate the Sabbath with their community, were murdered simply for being Jewish. This brutal event, in a temple and city much like my own, is a reminder that anti-Semitism still exists in this country. A reminder that hatred of Jews, of me, my family, and my community, is alive and flourishing in America today. The thought that a difference in religion would make some believe that others do not have the right to exist is frightening and sickening.  

 This is why, if given the chance, I would sit down the entire Jewish American community at one giant Shabbat table. I’d serve matzo ball soup, pass around loaves of challah, and do my best to offer comfort. We would take time to remember the beautiful souls lost to anti-Semitism this October and the countless others who have been victims of such hatred in the past. I would then ask that we channel all we are feeling—all the fear, confusion, and anger —into the fight.

As suggested in Korsha Wilson’s “Cooking Stirs the Pot for Social Change,” I would urge my guests to direct our passion for justice and the comfort and care provided by the food we are eating into resisting anti-Semitism and hatred of all kinds.

We must use the courage this sustenance provides to create change and honor our people’s suffering and strength. We must remind our neighbors, both Jewish and non-Jewish, that anti-Semitism is alive and well today. We must shout and scream and vote until our elected leaders take this threat to our community seriously. And, we must stand with, support, and listen to other communities that are subjected to vengeful hate today in the same way that many of these groups have supported us in the wake of this tragedy.

This terrible shooting is not the first of its kind, and if conflict and loathing are permitted to grow, I fear it will not be the last. While political change may help, the best way to target this hate is through smaller-scale actions in our own communities.

It is critical that we as a Jewish people take time to congregate and heal together, but it is equally necessary to include those outside the Jewish community to build a powerful crusade against hatred and bigotry. While convening with these individuals, we will work to end the dangerous “otherizing” that plagues our society and seek to understand that we share far more in common than we thought. As disagreements arise during our discussions, we will learn to respect and treat each other with the fairness we each desire. Together, we shall share the comfort, strength, and courage that traditional Jewish foods provide and use them to fuel our revolution. 

We are not alone in the fight despite what extremists and anti-semites might like us to believe.  So, like any Jew would do, I invite you to join me at the Shabbat table. First, we will eat. Then, we will get to work.

As a kid, I remember asking my friends jokingly, ”If you were stuck on a deserted island, what single item of food would you bring?” Some of my friends answered practically and said they’d bring water. Others answered comically and said they’d bring snacks like Flamin’ Hot Cheetos or a banana. However, most of my friends answered sentimentally and listed the foods that made them happy. This seems like fun and games, but what happens if the hypothetical changes? Imagine being asked, on the eve of your death, to choose the final meal you will ever eat. What food would you pick? Something practical? Comical? Sentimental?  

This situation is the reality for the 2,747 American prisoners who are currently awaiting execution on death row. The grim ritual of “last meals,” when prisoners choose their final meal before execution, can reveal a lot about these individuals and what they valued throughout their lives.

It is difficult for us to imagine someone eating steak, lobster tail, apple pie, and vanilla ice cream one moment and being killed by state-approved lethal injection the next. The prisoner can only hope that the apple pie he requested tastes as good as his mom’s. Surprisingly, many people in prison decline the option to request a special last meal. We often think of food as something that keeps us alive, so is there really any point to eating if someone knows they are going to die?

“Controlling food is a means of controlling power,” said chef Sean Sherman in the YES! Magazine article “Cooking Stirs the Pot for Social Change,” by Korsha Wilson. There are deeper stories that lie behind the final meals of individuals on death row.

I want to bring awareness to the complex and often controversial conditions of this country’s criminal justice system and change the common perception of prisoners as inhuman. To accomplish this, I would host a potluck where I would recreate the last meals of prisoners sentenced to death.

In front of each plate, there would be a place card with the prisoner’s full name, the date of execution, and the method of execution. These meals could range from a plate of fried chicken, peas with butter, apple pie, and a Dr. Pepper, reminiscent of a Sunday dinner at Grandma’s, to a single olive.

Seeing these meals up close, meals that many may eat at their own table or feed to their own kids, would force attendees to face the reality of the death penalty. It will urge my guests to look at these individuals not just as prisoners, assigned a number and a death date, but as people, capable of love and rehabilitation.  

This potluck is not only about realizing a prisoner’s humanity, but it is also about recognizing a flawed criminal justice system. Over the years, I have become skeptical of the American judicial system, especially when only seven states have judges who ethnically represent the people they serve. I was shocked when I found out that the officers who killed Michael Brown and Anthony Lamar Smith were exonerated for their actions. How could that be possible when so many teens and adults of color have spent years in prison, some even executed, for crimes they never committed?  

Lawmakers, police officers, city officials, and young constituents, along with former prisoners and their families, would be invited to my potluck to start an honest conversation about the role and application of inequality, dehumanization, and racism in the death penalty. Food served at the potluck would represent the humanity of prisoners and push people to acknowledge that many inmates are victims of a racist and corrupt judicial system.

Recognizing these injustices is only the first step towards a more equitable society. The second step would be acting on these injustices to ensure that every voice is heard, even ones separated from us by prison walls. Let’s leave that for the next potluck, where I plan to serve humble pie.

The Empty Seat

“If you aren’t sober, then I don’t want to see you on Christmas.”

Harsh words for my father to hear from his daughter but words he needed to hear. Words I needed him to understand and words he seemed to consider as he fiddled with his wine glass at the head of the table. Our guests, my grandma, and her neighbors remained resolutely silent. They were not about to defend my drunken father–or Charles as I call him–from my anger or my ultimatum.

This was the first dinner we had had together in a year. The last meal we shared ended with Charles slopping his drink all over my birthday presents and my mother explaining heroin addiction to me. So, I wasn’t surprised when Charles threw down some liquid valor before dinner in anticipation of my anger. If he wanted to be welcomed on Christmas, he needed to be sober—or he needed to be gone.

Countless dinners, holidays, and birthdays taught me that my demands for sobriety would fall on deaf ears. But not this time. Charles gave me a gift—a one of a kind, limited edition, absolutely awkward treat. One that I didn’t know how to deal with at all. Charles went home that night, smacked a bright red bow on my father, and hand-delivered him to me on Christmas morning.

He arrived for breakfast freshly showered and looking flustered. He would remember this day for once only because his daughter had scolded him into sobriety. Dad teetered between happiness and shame. Grandma distracted us from Dad’s presence by bringing the piping hot bacon and biscuits from the kitchen to the table, theatrically announcing their arrival. Although these foods were the alleged focus of the meal, the real spotlight shined on the unopened liquor cabinet in my grandma’s kitchen—the cabinet I know Charles was begging Dad to open.

I’ve isolated myself from Charles. My family has too. It means we don’t see Dad, but it’s the best way to avoid confrontation and heartache. Sometimes I find myself wondering what it would be like if we talked with him more or if he still lived nearby. Would he be less inclined to use? If all families with an addict tried to hang on to a relationship with the user, would there be fewer addicts in the world? Christmas breakfast with Dad was followed by Charles whisking him away to Colorado where pot had just been legalized. I haven’t talked to Dad since that Christmas.

As Korsha Wilson stated in her YES! Magazine article, “Cooking Stirs the Pot for Social Change,” “Sometimes what we don’t cook says more than what we do cook.” When it comes to addiction, what isn’t served is more important than what is. In quiet moments, I like to imagine a meal with my family–including Dad. He’d have a spot at the table in my little fantasy. No alcohol would push him out of his chair, the cigarettes would remain seated in his back pocket, and the stench of weed wouldn’t invade the dining room. Fruit salad and gumbo would fill the table—foods that Dad likes. We’d talk about trivial matters in life, like how school is going and what we watched last night on TV.

Dad would feel loved. We would connect. He would feel less alone. At the end of the night, he’d walk me to the door and promise to see me again soon. And I would believe him.

Bittersweet Reunion

I close my eyes and envision a dinner of my wildest dreams. I would invite all of my relatives. Not just my sister who doesn’t ask how I am anymore. Not just my nephews who I’m told are too young to understand me. No, I would gather all of my aunts, uncles, and cousins to introduce them to the me they haven’t met.

For almost two years, I’ve gone by a different name that most of my family refuses to acknowledge. My aunt, a nun of 40 years, told me at a recent birthday dinner that she’d heard of my “nickname.” I didn’t want to start a fight, so I decided not to correct her. Even the ones who’ve adjusted to my name have yet to recognize the bigger issue.

Last year on Facebook, I announced to my friends and family that I am transgender. No one in my family has talked to me about it, but they have plenty to say to my parents. I feel as if this is about my parents more than me—that they’ve made some big parenting mistake. Maybe if I invited everyone to dinner and opened up a discussion, they would voice their concerns to me instead of my parents.

I would serve two different meals of comfort food to remind my family of our good times. For my dad’s family, I would cook heavily salted breakfast food, the kind my grandpa used to enjoy. He took all of his kids to IHOP every Sunday and ordered the least healthy option he could find, usually some combination of an overcooked omelet and a loaded Classic Burger. For my mom’s family, I would buy shakes and burgers from Hardee’s. In my grandma’s final weeks, she let aluminum tins of sympathy meals pile up on her dining table while she made my uncle take her to Hardee’s every day.

In her article on cooking and activism, food writer Korsha Wilson writes, “Everyone puts down their guard over a good meal, and in that space, change is possible.” Hopefully the same will apply to my guests.

When I first thought of this idea, my mind rushed to the endless negative possibilities. My nun-aunt and my two non-nun aunts who live like nuns would whip out their Bibles before I even finished my first sentence. My very liberal, state representative cousin would say how proud she is of the guy I’m becoming, but this would trigger my aunts to accuse her of corrupting my mind. My sister, who has never spoken to me about my genderidentity, would cover her children’s ears and rush them out of the house. My Great-Depression-raised grandparents would roll over in their graves, mumbling about how kids have it easy nowadays.

After mentally mapping out every imaginable terrible outcome this dinner could have, I realized a conversation is unavoidable if I want my family to accept who I am. I long to restore the deep connection I used to have with them. Though I often think these former relationships are out of reach, I won’t know until I try to repair them. For a year and a half, I’ve relied on Facebook and my parents to relay messages about my identity, but I need to tell my own story.

At first, I thought Korsha Wilson’s idea of a cooked meal leading the way to social change was too optimistic, but now I understand that I need to think more like her. Maybe, just maybe, my family could all gather around a table, enjoy some overpriced shakes, and be as close as we were when I was a little girl.

Thinking of the main staple of the dish—potatoes, the starchy vegetable that provides sustenance for people around the globe. The onion, the layers of sorrow and joy—a base for this dish served during the holidays.  The oil, symbolic of hope and perseverance. All of these elements come together to form this delicious oval pancake permeating with possibilities. I wonder about future possibilities as I flip the latkes.

Everybody Can Grow Their Own Food: Here’s How to Get Started

Welcome to Digging In , a column for the horticulturally curious. If you’ve ever entertained bucolic fantasies about starting a farm or lingered around the seed packet display at the hardware store thinking about the things you would grow if you could, this is for you. Whether you have massive tracts of land at your disposal or just a few square feet of fire escape, every gardening endeavor starts with a pile of dirt and a dream.

When Ashlie Thomas and her husband moved into their North Carolina home in 2018, their one-acre property was pretty much a blank slate. Over the past couple of years, Thomas and her husband transformed that empty acre into roughly a dozen garden beds, where they grow squash, root vegetables, leafy greens, nightshades, herbs , medicinal plants, and more using entirely organic methods. Thomas has been documenting their journey from the beginning through her Instagram account @the.mocha.gardener , where she also shares gardening tips and speaks about food security issues in rural areas of the U.S.

But Thomas insists she’s no gardening expert—in fact, she thinks there are no gardening experts. “We have not created this earth, we have not created this ground, we have not created the plants. We are simply nurturers to what already exists,” she told me over Zoom. Instead, she believes firmly that everybody, even you, can successfully grow plants and vegetables. It doesn’t matter if you’ve killed every houseplant you’ve ever owned; with the right knowledge, you can successfully manage a thriving garden.

This guide is meant to offer help as you start your own gardening journey, even if you don’t know where to begin. In addition to Thomas, I spoke with two other highly knowledgeable gardeners: Nick Storrs, an instructor at the New York Botanical Gardens and owner of Homegrown Kitchen Gardens , and Lee Reich , an author and lecturer on organic gardening with a Ph.D. in horticulture. The three of them provided a bounty of insights on what you should know before you get started, the easiest things to grow as a beginner, and the essential tools you need to start growing food yourself.

What do i need to know first.

Before beginning a new garden, you need to know the space you’re working with. Each type of plant thrives under a particular set of conditions, so it’s important to evaluate your space in a few key ways to understand what you can grow.

Where you are—your specific geographic environment—is an essential piece of the puzzle to understand what you can and cannot grow.

Hardiness zone

A hardiness zone is based on the average annual low temperature in your area and determines which plants (particularly perennials) will be best suited to your climate. The USDA keeps a detailed map of the country based on hardiness zone, designating areas a number between 1 and 13. Plant and seed labels will typically include a range of ideal hardiness zones or say that the plant is “cold hardy” up to a certain zone number. This is not as important for annual vegetables that last a single growing season, but is essential for perennial herbs, fruiting trees, or flowers.

Beginner gardeners frequently set seed down too early—on the first warm day of the year. We’ve all been tricked by a balmy February weekend, and plants planted early are easily killed by late season cold snaps. “I plant according to the calendar, not the weather,” Reich says. He recommends finding out the average date of the last frost in your area—that is, the last day of the year that temperatures plunge below freezing. Seed labels will often include the best time to set seed in relation to the date of last frost. Some plant seeds, like certain peas and spinach, can go in the ground before the last frost. Others, like melon, should go in two weeks after the last frost.

According to Thomas, one of the best resources for this sort of agricultural information is your country extension site. Extension offices are typically run either by the state or research universities and they provide information on soil quality, frost dates, planting times, and other agricultural topics to the public. To find yours, type “[blank] county extension site” into a search engine. All extension sites are not created equal, so if you have trouble finding what you need online, you can always give them a call.

Most vegetables need a lot of sunshine in order to thrive. At a minimum, Reich, Storrs, and Thomas all say that your chosen spot should get at least six to eight hours of direct sunlight a day.

When helping his clients decide where to plant in their yard, Storrs suggests this trick:

“Wake up bright and early one day and set an alarm on your phone to go off every hour. After each alarm, go out and take a picture of your backyard, balcony, or wherever you want to grow things over the course of the whole day. Soil safety

Before you begin planting anything, you need to know your soil’s general safety and history, and then assess it for specific attributes that will make it suitable for growing. If you’ve done the research but are still uncertain about your soil safety, you can seek out soil testing services approved by your state through your local extension site or your state health and agricultural departments.  

Soil drainage

Just because soil is safe doesn’t mean that it’s good quality. According to Reich, soil drainage is the most important factor in determining soil quality.“If a plant sits in waterlogged soil, the roots can't function. You could give it all the fertilizer you want and it’s not gonna grow well,” says Reich.

To test your soil drainage, poke a few holes in the bottom of a coffee can. Dig a hole in the ground and place the can snugly inside. Fill it with water and let the water drain out completely, then fill it again. If the water drains quicker than an inch per hour the second time around, then the soil drainage is adequate. If not, Reich suggests either finding another spot to garden or building raised beds. You can also improve the drainage of your soil with mulch, compost, and materials like vermiculite.

As for potted plants, stick to store-bought potting soil, which is designed to drain quickly and efficiently. Reich warns against using soil from your yard in pots, as pots need an even higher level of drainage that most conventional soils can’t provide.

Soil fertility

Like humans, plants need certain nutrients to thrive. Most plants get their necessary nutrients from the soil, which is why fertile, healthy soil is important. You can tell if you have fertile soil by the quantity of weeds in your garden. The more weeds there are, the more nutritious the soil. Few to no weeds and you’ll likely want to think about fertilizer.

Reich insists that the best way to fertilize is organically, and the best organic fertilizer is compost. “A lot of people think they need to get compost down deep into the roots, but it's not true. The feeder roots of all plants are in the top few inches of soil, so compost really does its best work just laid on top of the ground.”

If you're going to buy plant food, it’s important to know how to read the label. Typically, you’ll see three consecutive numbers formatted like this: #-#-#. These numbers refer to the levels of nitrogen (N), phosphorus (P), and potassium (K) in the fertilizer, all of which are important for plant growth. A common rule of thumb is “up” nitrogen, “down” phosphorus, and “all around” potassium. To explain: Nitrogen encourages the plant to grow “up” with bigger, greener foliage; phosphorus encourages bloom and root growth “down”, and potassium is beneficial for “all around” health. Do some research on the vegetables you plan on growing to learn what type of fertilizer they prefer and how often they like to get fed. Just remember, organic is the way to go.

Soil temperature

For heat-loving crops like tomatoes and peppers, Storrs suggests finding the warmest spot in your yard to ensure a long growing season. To do this during the winter, he suggests paying attention to snow melt. Snow lingers the longest in the cold parts of the yard. Steer clear of that spot when you begin to plant your vegetable garden.

“Watering with a watering can sounds charming and may work for a few containers on a patio, but that charm wears off pretty quickly,” says Storrs. Having easy access to water is important for any garden, and even the most enthusiastic gardeners will get tired of schlepping a watering can back and forth between the sink and their yard. Situate your garden as close to your water source as possible, and consider installing a sprinkler system or hose if you have the means.

What should I grow first?

Not everybody has the space for a big vegetable garden. For those working with a window box or fire escape, Thomas recommends growing an herb garden. “Everyone likes to season their food, and herbs are something people will utilize the most.”

If you do have a few square feet of dirt to work with, there are a lot more possibilities. There’s nothing wrong with wanting to grow the easiest vegetables with the greatest yield, but that may not be the best approach to starting a successful garden. Instead, think about what you eat. “I usually say, go to your cookbook first,” says Storrs. “Start with the vegetables and herbs that you’re already cooking, even if they take a little bit more work. If you’re actually eating from your garden, you get so much more satisfaction from it.”

That being said, some vegetables are more beginner-friendly than others.
